All food provided by Annabel's Expedition Catering is created from scratch, using fresh, local ingredients where available.

I usually use wholemeal flour, real butter and hardly any salt, so tell me if you prefer otherwise!  I don't thicken soups with flour, so they're suitable for coeliacs.

Here are a few of my most popular dishes:

Soups and Starters:

  • Cullen Skink - a Scottish soup made with cream, smoked haddock, potatoes and parsley
  • Tomato Soup - ok, so I cheat and use tinned tomatoes in this one, but also onion, garlic, peppers, oregano, basil etc.
  • Potato & Cumin Soup - a thick, warming starter or lunch.
  • Celery, Walnut and Parmesan Salad - with walnut oil dressing

Main Courses:

Steak Pie      Vegetarian Lasagne

  • Walnut and French Bean or Spinach and Cream Cheese Lasagne - one of those vegetarian dishes that keen meat eaters can get quite fond of !
  • Steak Pie - another Scottish classic; home-made flaky pastry of course !

Whole Salmon

  • Salmon with dill sauce - hopefully you've caught the salmon ?
  • Haggis, neeps & tatties - a Scottish classic, done the AEC way to make it non-greasy. Vegetarian version always available !
  • Roast Chicken & all the trimmings - the AEC version has bacon & garlic on the chicken, stuffing and roast potatoes done in the same dish, plus parsnips when in season.

Puddings:

Sticky Toffee Pudding

  • Sticky Toffee Puddings - a dark, luscious sponge pudding with dates and a caramel sauce
  • Fruit Tart - whatever fruit is in season, such as plums or strawberries, on a thin pastry base and vanilla cream filling.
  • Baked Apples - filled with marmalade or sultanas and rum or whisky, served with custard(one of the few packet mixes I use)

Cakes:

  • Chocolate and Ginger - dark chocolate sponge with pieces of ginger in it, iced with chocolate buttercream
  • Juicy Fruitcake - a classic British cake
  • Millionaire's Shortcake - a Scottish favourite of shortcake, caramel and chocolate; I usually make it gluten-free!
  • Scones - another Scottish classic; fruit or cheese; served with cream and jam at teatime
  • Flapjack - the simple version is best; just oats, sugar, syrup and butter; very useful as a travelling snack !
